Ingredients:
- 1 box of white cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- Pink gel food coloring light and dark shades
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2-3 tablespoons milk
- Edible pink glitter optional
- Edible pearl decorations optional
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners
In a mixing bowl, combine the white cake mix, eggs, vegetable oil, buttermilk, and vanilla extract
Mix until well combined
Divide the cake batter into three separate bowls
Leave one bowl as it is, tint the second bowl with a light pink gel food coloring, and the third bowl with a darker pink gel food coloring
Adjust the color intensity to your preference
Start with the darkest pink batter and fill the cupcake liners 1/3 full
Follow with the medium pink batter filling another 1/3, and finish with the lightest pink batter filling the final 1/3 of the cupcake liner
Bake the cupcakes in the preheated oven for about 15-18 minutes or until a toothpick inserted into the center comes out clean
Allow the cupcakes to cool completely on a wire rack
While the cupcakes are cooling, prepare the frosting by beating the softened butter until creamy
Gradually add the powdered sugar and milk, alternating between the two until you achieve a smooth and fluffy consistency
Divide the frosting into three separate bowls
Tint one bowl with the light pink gel food coloring, another with the medium pink, and leave one bowl white
Using a piping bag fitted with a large star tip, pipe rosettes of the different shades of pink frosting onto the cooled cupcakes, creating an ombre effect
If desired, sprinkle edible pink glitter and add edible pearl decorations to give your cupcakes a royal touch
Serve and enjoy your Pink Ombre Ruffles Princess Cupcakes!
