This BBQ Potato Salad is a great side dish for summer barbecues. This sauce is creamy, tangy, and full of flavor. It goes well with grilled meats and is sure to please everyone. Adding hard-boiled eggs and crispy bacon takes it to the next level!
Ingredients:
- 4 cups potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/2 cup crispy bacon, crumbled optional
- 2 hard-boiled eggs, chopped
Instructions:
Boil the diced potatoes until fork-tender, then drain and let cool
In a large bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, and honey until well combined
Add the cooled potatoes, celery, red onion, and parsley to the bowl
Gently toss to coat evenly
Season with salt and pepper to taste
If desired, add crispy bacon for extra flavor
Fold in the chopped hard-boiled eggs
Refrigerate for at least 2 hours before serving to allow flavors to meld
