A hearty and comforting soup made with healthy foods that is great for people on the Whole30 or paleo diet.
Ingredients:
- 1 large butternut squash, peeled, seeded, and diced
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- Optional: coconut cream for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the minced garlic and diced onion and saut until the onion is soft
Chicken or vegetable broth, ground cinnamon, dried thyme, salt, and pepper should all be added
Bring to a boil, then lower the heat and let it cook for 20 minutes, or until the squash is soft
Blend the soup until it's smooth, either with an immersion blender or a regular blender
Check the seasoning and make changes if needed
Serve hot, and if you want, add a drizzle of coconut cream on top
