Power Pesto Spaghetti



Fresh basil, garlic, and Parmesan cheese give this Power Pesto Spaghetti recipe its bright flavors. Pine nuts and extra virgin olive oil give it a richness. This dish is quick and easy to make, and it's full of flavor, so it's great for a weeknight dinner or a special event.

Ingredients:

  • 300g spaghetti
  • 2 cups fresh basil leaves
  • 1/3 cup pine nuts
  • 3 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
  • Optional: cherry tomatoes for garnish

Instructions:

Cook spaghetti according to package instructions until al dente

Drain and set aside

In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese

Pulse until finely chopped

With the processor running, slowly add olive oil until the mixture forms a smooth paste

Season with salt and pepper to taste

Toss the cooked spaghetti with the pesto sauce until well coated

Serve hot, garnished with cherry tomatoes if desired
