Ingredients:
- 2 cups dried black eyed peas, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 teaspoon garam masala
- 1 teaspoon salt, or to taste
- 3 cups vegetable broth
- 1 cup coconut milk
- Fresh cilantro, for garnish
Instructions:
Heat olive oil in the Instant Pot using the saut function
Add diced onions, minced garlic, and grated ginger
Saut until onions are translucent
Add chopped tomatoes and cook until softened
Stir in ground cumin, ground coriander, turmeric powder, paprika, garam masala, and salt
Add soaked black eyed peas and vegetable broth
Stir to combine
Close the lid of the Instant Pot and set the valve to sealing position
Cook on high pressure for 10 minutes
Once done, allow for natural pressure release for 10 minutes before manually releasing any remaining pressure
Carefully open the lid and stir in coconut milk
Serve hot, garnished with fresh cilantro
